Bonjour ! Vive Le Quebec! Vive Montreal! I recently visited Montreal and decided to take my blog assignment with me, to a butcher where my family went from over 20 years. Boucherie La Préfrence is a family owned butchery shop located in Lasalle, Montreal. The butcher I spoke with named Tony said his family owned butchery has been around for two generations, since 2001. They have owned it for about 15 years!
Primarily, they purchase factory-raised animals because of the specific area and cliental they cater to, which is a relatively affordable for the customers. So therefore, their decision on whether they purchase free-ranged animals and or factory-raised animals is based upon their type of cliental they receive. They like to give their clients the best prices and good quality meats. For example they purchase grade AAA and AA from local chicken farms, which gives their customers great quality meats.
Tony’s philosophy for not choosing to farm/purchase organically fed animals is that he said it’s not 100% proven healthier or safer, with that being said he doesn’t believe in “organic farming”. We shouldn’t believe in organic per say because our environment is polluted which means our fruits and vegetables are not what they seem to be. It’s an illusion… And this will still be an on going debate until proven..
I learned through this experience that to sustain your business you must go with your location and type of cliental because that can determine if your business is sustainable. Also I learned that supporting your local butchers is great because its you a chance to try something new. Shopping locally can help you create a better dish using your creativity because it is new to you. Supporting your local food producer can better the economy and its an over all healthier chose.
